Mother’s Day is right around the corner and this Vanilla Mousse Dip is a perfect light dessert to share with your Mom.
This is an incredibly, delicious creamy dip and can be used with fresh fruit, grilled {as I did}, or you could have a plate stacked with a variety of fruits and cookies to dip.
I would have loved to serve this to my late Mom, as she had such a sweet tooth, and she was always looking for something to nibble on. She could not eat large meals – what we consider as standard portions – at a time, and therefore she had lots of small meals throughout the day.
My Mom-In-Law on the other hand, will also love this. I plan on spoiling her quite a bit this Mother’s Day, as we will also be celebrating something else, centering around her. I know she reads the blog now and then, so I do not want to give away too much of what I have planned.
Let’s just say, I might make this Vanilla Mousse Dip,,, or I might make something else, maybe this White Chocolate Dip !
If you are planning to make this Dip, for Mother’s Day or any other day, try making it only a little while before serving as chilling will harden the Dip – it does soften up again when you bring it back to room temperature, but there is a slight change in taste.
Vanilla Mousse Dip
Vanilla Mousse Dip
Ingredients
- 3 TB Water
- 2 t Gelatin plain
- ⅔ cup Sugar
- ½ cup Cornflour (Cornstarch)
- 1 t Vanilla Extract
- 1 ½ cups Fresh Cream (double cream/whipping cream)
TO SERVE:
- Pineapple strips or cubes
- Honey
- Lemon Juice
Instructions
- Place the Water in a small bowl – sprinkle over the Gelatin and let stand until spongy ( 3 - 5 minutes )
- Meanwhile, in a small saucepan, heat the Sugar and Water – bring to the boil, turn down the heat to medium and let simmer until the Sugar has dissolved and the mixture is syrupy
- Place the Cornflour in a small bowl – add a little of the Sugar Syrup and mix until a paste forms – now add the Cornflour paste to the Syrup – simmer whilst stirring continuously – stir in the Gelatin – keep stirring until the Gelatin has dissolved – remove from heat and let cool 10 minutes – add the Vanilla and stir well – cool completely
- Whip the Cream until stiff peaks form – slowly add the Vanilla/Syrup mixture and fold through gently
TO SERVE:
- Mix a little Honey and Lemon Juice – brush over the Pineapple and grill, using a health griller, George Foreman grill or however you prefer
