Tex-Mex Burgers are juicy delicious ! Topped with a spicy Guacamole and a quick homemade Onion Pickle – you decide how hot ( or not! ) you like your burgers !
Tex-Mex Burgers are so spicy and juicy, I am sure it will become a family favorite soon.
Making patties from scratch are so much more fun than picking up a 6 pack from the butchery, even if they are freshly made.
I like to know exactly what is in a burger patty, and I absolutely love playing around with different ingredients.
Especially when those ingredients not only add more flavor, but also make the patties that much juicier.
I know some of my US friends would add even more Chilies than I have in the recipe, but as I have mentioned before, we are not that big on too hot dishes.
Including burgers, spicy, yes, but hot-as-hell, no way. The only person I know with an appetite for that kind of heat is my future son-in-law, who will even add some Sriracha sauce to these burgers.
Anyhow, the option is there for you, add more, keep the seeds or remove, or leave out the Chilies entirely if you have a distinct dislike for spicy, hot food (or have small kiddos!).
Looking at the ingredients, you might think it will take some time to prep, cook and assemble.
But these Tex-Mex Burgers were on the table in under 45 minutes and that includes the time the patties were firming up in the refrigerator.
You also do not need to wait for the Red Onion Pickle to cool completely, when you are ready, slap them on the burger.

Tex-Mex Burgers
Ingredients
PATTIES:
- 450 g Lean Ground Beef ( 1 pound )
- 1 Egg
- 1 ½ t Cajun Spice
- 4 Spring Onions finely chopped
- ¼ cup Cilantro finely chopped
- ½ t Salt
GUACAMOLE:
- 1 large Avocado peeled, stoned
- ¼ cup Cilantro chopped
- 1 Green Chili finely chopped (deseeded if prefer)
- 4 Spring Onions finely chopped
- 2 Limes juice only
- Salt to taste
RED ONION PICKLE:
- 2 Red Onions halved and sliced
- 1 cup Orange Juice freshly squeezed
- ¼ cup Fresh Lime Juice
- 1 Green Chili chopped (deseeded if prefer)
- 2 t Caster Sugar Superfine Sugar
TO BUILT:
- 4 Burger Buns halved, toasted or not
- ½ cup Cottage Cheese smooth, plain
- Lettuce shredded
Instructions
PATTIES:
- Combine all the ingredients for the Patties in a mixing bowl – mix well, form into 4 patties and chill for 20 – 25 minutes
GUACAMOLE:
- Mash together all the ingredients for the Guacamole in a small mixing bowl – set aside until needed
RED ONION PICKLE:
- Place all the ingredients for the Red Onion Pickle in a medium saucepan – bring to the boil and continue to boil for 2 minutes – remove from the heat and let cool in the liquid – drain before using
TO FINISH:
- Cook the Patties over the coals, skillet or on a George Foreman griller
- Divide the Cottage Cheese in 4 and spread over the bottom Burger buns – top with Lettuce, Patty, Guacamole and end with a scoop of Red Onion Pickle - top with Burger bun
Top with the Burger bun and serve.
