Rice Krispie Cupcakes for Valentine’s Day is a no-bake sweet treat. The Rice Krispies and the surprise Jelly candies make these a hit every time !
These Rice Krispie Cupcakes are perfect for Valentines Day. Crunchy, gooey and chewy all in one, with a burst of flavor from the strawberry jellies.
I think these “cupcakes” would be perfect for the kids to take to school. Not too lovey-dovey and overly screaming Valentines Day (hey, I’m thinking about the boys here !). But enough of a Valentine sweet treat for the whole classroom to enjoy.
I remember my daughter used to always take something to school, for whatever reason. Valentines Day, her birthday, school closing/opening and I am sure I am forgetting a lot of other days as well.
Pity I worked full-time when she was in primary school and all the way into taking treats to school for her friends.
Back then I used to just grab whatever was available for the occasion in the stores and that was what she took with. Never made anything homemade.
I also have to mention that I used to hate cooking and especially baking ! Still can not believe I am actually writing about food, sharing recipes .. but, well, so life changes us.
Now I know candies, like the above jellies, differ from country to country. But do try to find something similar for this recipe – these are very soft in the center and just chewy enough to my liking.
I used silicone muffin cups as they bend easily and one of your hands stay sticky-free – most of the time, I have to add. No cooking oil sprayed or anything – just pressed the mixture into the cups and flattened the tops.
You do not have to flatten the tops, especially if you substitute the whipped cream for maybe a drizzle of white chocolate ?
Silicone molds work like magic !
Removing the cupcakes from the silicone cups are a breeze as they just slip right out and you can pop them into a pretty, clean paper cupcake liner.
Adding the Strawberry Jellies was an excellent idea. My family did not really know what to expect, only not to expect the usual Krispie treats !
Needless to say, all the Rice Krispie Cupcakes were gone in no time.

Rice Krispie Cupcakes (Valentines Day)
Ingredients
- 3 TB Unsalted Butter
- 300 grams Marshmallows 10.5 oz
- 5 cups Rice Krispies
- 1 cup Strawberry Jelly Candies or similar candy
- Whipped Cream to serve
- Sprinkles to decorate
Instructions
- Melt the Butter in a large pot – add the Marshmallows and stir until melted and smooth – remove from heat
- Stir in the Rice Krispies, stirring between each cup added
- Add the Jelly candies and mix well
- Press into silicone muffin cups and chill until set – remove from silicone cups and transfer to pretty cupcake liners
- Pipe over whipped cream and decorate with Sprinkles just before serving
Serve and enjoy !
