Need an easy fix for a sweet tooth craving ? These quick Mini Banoffee Pies take only a few minutes to get ready and you can serve them immediately. A sweet bite of heavenly bliss, especially to a caramel addict like myself.
We are fortunate in South-Africa to have the Nestle Caramel Treat available at only a fraction more expensive than plain sweetened condensed milk.
I know a lot of countries do not stock these, even though Nestle products are available just about everywhere.
Make your own Caramel Treat !
The internet does however, as usual, have a solution for this ! The way we used to make them before the ready-made Caramel cans became available: Boil a can of sweetened condensed milk for 2 hours.
I have also seen via Google a bunch of links to make these delights in your slow-cooker. A quick search on Google will set you right, if you happen to be one of the unfortunate ones to which the canned Caramel is unavailable.

Which type of cookie to use :
You can use any kind of cookie or biscuit, as long as it is sturdy enough to hold all the toppings in place and not break apart. Graham Crackers would be perfect to use.
As for drizzling the Banana slices with Lemon Juice, I only do that when I am not serving the Banoffee Pies immediately as the Juice prevents discoloration.
The Caramel is super sweet and therefore I do not use a too sweet whipped Cream, sort of balancing the two flavors off one another.

Quick Mini Banoffee Pies
Ingredients
- 12 Digestive Biscuits
- 12 TB Caramel Condensed Milk I use Nestle Caramel Treat
- 1 cup Whipped Cream
- 3 Bananas sliced
- 1 TB Lemon Juice
- Mint Leaves to garnish
Instructions
- 1.) Spread a tablespoonful of Caramel on each Biscuit
- 2.) Add a scoop of Whipped Cream over the Caramel
- 3.) Drizzle the Banana slices with Lemon Juice and arrange 2 or 3 slices on top of the Cream
- 4.) Garnish with Mint leaves and serve
