Spicy Mexican Beef with Mini Cheese Breads are the perfect complete meal, ideal for all seasons. So quick and easy to make too !
I am sharing two recipes with you today. Serve them together and your dinner is all sorted !
Mexican beef with mini cheese breads are the perfect combination. You can even add some more freshly chopped chilies to the beef to give it an extra kick.
If you have any of the mini cheese breads leftover, consider packing them for a delicious lunch the following day. Serve with or without butter – hot or cold.
This is a very filling meal and I serve no additional sides, vegetable or salad, with the beef and the mini breads. However, feel free to add a crunchy, or even a fruity salad on the side if you so prefer.
As I mentioned before, the mini Cheese Breads are great to pack for the next day’s lunch (that is if you have any leftover).
I only had some leftover once before, as these little breads are so delicious, we normally have two with our Mexican Beef, and finish off any leftover mini breads after dinner.
Not that this is not a filling meal, the Cheese Breads are just sooo delicious ! Like popcorn, once you start you can not stop until it is all gone !
Mini Cheese Breads
Needless to say, I bake up a batch of the Mini Breads at least once every two weeks. If it is not myself craving them, my hubby or one of the kids will request them. Usually to take to lunch, but we also enjoy the breads with our Saturday brunch.
And I just about always bake these when we have a barbeque. I prefer little breads, packed with Cheese and Bacon to the usual toasted sarmies we normally serve with barbecued meats in South-Africa.
Start with the Mini Breads and whilst in the oven, you can make the Mexican Beef. All on the dinner table in about an hour and ten minutes.

Mexican Beef With Mini Cheese Breads
Ingredients
MINI CHEESE BREADS:
- 4 Cups Self-Raising Flour
- 250 grams Cheddar Cheese grated ( 8 oz )
- 1 cup Frozen Corn defrosted
- 1 Onion finely chopped
- 125 g Bacon Bits uncooked ( 4 oz )
- 2 cups Buttermilk
- 1 t Paprika
- ½ cup Spring Onions chopped
MEXICAN BEEF:
- 2 TB Vegetable Oil
- 1 Onion chopped
- 450 grams Lean Ground Beef ( 1 pound )
- 1 – 2 Green Chilies chopped
- 1 can Mexican Style Tomatoes
- 1 TB Sugar
- Salt and Black Pepper to taste
TO SERVE:
- 1 Avocado sliced, to serve
- 1 cup Sour Cream to serve
Instructions
- Pre-heat the oven to 180 deg C (350 deg F) – spray 2 x six hole mini bread pans with cooking oil
- Mix the Flour, Cheddar (keep 1/2 cup aside), Corn, Onion, Bacon and Buttermilk until well mixed – spoon into the prepared pans – sprinkle with the remaining Cheddar and Paprika – bake 1 hour or until well risen and cooked through
- Remove the breads from the oven – let cool in the pans for 5 minutes – remove -sprinkle with Spring Onions and serve with or without Butter
- Meanwhile, heat the Oil and saute the Onion until soft – add the Beef and Chilies – stir-fry until cooked
- Add the Tomatoes and Sugar – simmer for 10 – 15 minutes
- Season to taste with Salt and Pepper and serve with Avocado and Sour Cream on the side alongside with the Mini Cheese Breads
Serve the Mexican Beef with the Mini Cheese Breads, sliced Avocado and a dollop of Sour Cream on the side.
