Looking for a delicious, fruity drink which you can sip on ?
I am in general not a big fan of Grapefruit Juice, but using it with the Pineapple and Malibu in this Malibu Summer Fun cocktail is pure delight. Absolutely no bitter taste or anything like that.
I add a lot of ice to this one, and the drink does get a bit watered down towards the end, but I love that part maybe even more than the first few sips.
And I am also a believer in one drink, one glass of water, not that it happens very often that I will have more than one alcoholic drink.
On especially hot days, I would have two, maybe three of these drinks, but I cut the Malibu by about half.
Non-Alcoholic Drink ?
Something for the kids ? I know they love seeing fruit float around in their drinks ! Leave out the Malibu, and replace it with a quarter teaspoon of Coconut Essence.
I’ll leave it up to you to figure out a way in order for the kids’ drinks to not get mixed up with the adults’ alcoholic drinks.
One idea could be to use lightly colored glasses for the kids or perhaps a straw with a fun topper (not sure whether it is called a topper when something like that normally sits halfway on the straw)

Ingredients
- ¼ cup Malibu Rum ( see below for non-alcoholic version )
- ¼ cup Pineapple Juice
- ½ cup Grapefruit Juice
- 2 slices Lime quartered
- 1 slice Grapefruit segmented
- Ice Cubes
- Grapefruit Rind to garnish
Instructions
- Pour the Malibu and both Juices into a tall glass – give a gentle stir
- Add the Lime and Grapefruit slices – top up with Ice – give the drink another stir
- Garnish with a small piece of Grapefruit Rind
Notes
- Leave out the Malibu, and replace it with a quarter teaspoon of Coconut Essence
- Follow the rest of the recipe
Garnish with a small piece of Grapefruit Rind and serve immediately.

I assume any other citrus could be substituted for grapefruit? Unfortunately, I cannot eat grapefruit specifically, due to blood pressure meds. Thanks!

Try the round ice cube trays that make globe shaped cubes. They cool better and melt slower so your drink doesn't get watered down. :)
For kids punch, make a large batch and serve kids' beverages from a kids' table for parties. Mix adult drinks individually. Kids can have all they want and self-pour. Adults must make theirs -- or have it made -- no confusion at all!
