Quick and Easy Egg Salad recipe which can also be used on sandwiches – perfect snack or appetizer
A couple of days ago, I picked up a packet of ready made mini pie shells thinking it was the sweet kind. Got home and found that I picked up the savory pie shells, instead of the sweet shells.
I have put them aside as I had no idea what to do with them at first. The other day we were having a light dinner that evening. So inspiration struck and I made these Egg Salad Bites to snack on during the afternoon (we were also watching Rugby).
This has to be one of the most simplest Egg Salad recipes around, nothing weird added or loaded with bacon as one can get carried away with Egg Salad. These savory treats were just right to snack on and get us through to dinner time.
You can reduce the Mayonnaise, but I would not increase it with only six Eggs. I think this is just about the right ratio which we prefer and it worked deliciously served in the small Pie Shells.
Instead of topping the Bites with Chives, you can also chop the Chives finer and stir it into the Egg mixture – all up to you. Another awesome addition is some sharp Cheddar Cheese (and of course Bacon as I mentioned !).
Also, these would make a delicious savory addition at tea time, especially if you have friends over.
The Egg Salad keeps very well in a sealed container in the refrigerator for 3 – 5 days and is always a winner on sandwiches too – great reason to make a double batch ! Or simply stir-through some cooked baby potatoes and you have a quick potato salad.

Egg Salad Bites
Ingredients
- 6 Hard Boiled Eggs mashed
- ½ cup Mayonnaise
- Salt and Black Pepper to taste
- 24 Savory Mini Pie Shells (homemade or store-bought)
- Paprika to sprinkle
- Extra Black Pepper to sprinkle (optional)
- Chives chopped, to garnish (optional)
Instructions
- Add the Mayonnaise to the mashed Eggs – stir well to combine – season to taste with Salt and Pepper – chill for 1 hour
- Fill each Pie Shell with the Egg mixture – sprinkle over Paprika and extra Black Pepper (if using)
- Garnish with Chives (if using) and transfer to a serving plate
Notes
Keep refrigerated until ready to serve.

This sounds like it would be fast and simple for a weekend lunch paired with a great salad. I wonder how they would hold up for a workday lunch. I will have to give them a try. Thanks for sharing.
