Chicken Parma and Avocado Salad is a delicious, filling Salad which is perfect for lunch or light dinner on a warm evening night ! So quick to make, especially if you have leftover rotisserie chicken on hand.
I hope you are not fed up (pun intended !) of all the salad recipes I share lately. Today I have a recipe for a Chicken Parma and Avocado Salad which I have to list at the top of all my favorites ever.
The salad is perfect for lunch and filling enough to serve for dinner as well. You might want to add a nice, fresh, crusty dinner roll, but other than that, your dinner is sorted.
You can use either Parma Ham or Black Forest as both of these gourmet deli meats go very well with the Chicken and the rest of the ingredients.
We are all huge Avocado lovers ! And I actually have a small bowl with some extra Avocado cubes when I serve this Chicken Salad or any other salad with Avocado.
My family reckons I do not add enough, and I tend to agree with them, but visually, I like any food in general, to have a sort of balance, if you know what I mean?
I also never toast Cashew Nuts as my daughter and I just love the raw Cashews and eat them by the handfuls during the day. If you prefer toasted, go for it !

Now, as I mentioned, this Chicken Parma and Avocado Salad can be made using Parma ham which I normally do. But well, since I received a packet of Smoked Black Forest Ham in my Hamper, I decided to use that instead. Totally delicious !
This salad has such delicious flavors and textures, it is quite a treat actually. And if you use rotisserie Chicken or any leftover cooked Chicken, the salad is done within minutes.
A quick, filling lunch or dinner on a hot night in a jiffy.
Chicken Parma and Avocado Salad
Chicken Parma and Avocado Salad
Ingredients
SALAD:
- 2 handfuls Mixed Herb Salad Leaves
- 3 Chicken Fillets cooked and cubed
- ½ cup Feta Cheese cubed or crumbled
- 1 Avocado peeled, stoned and cubed
- 10 slices Parma Ham (or Black Forest Ham)
- ½ cup Cashew Nuts toasted or not
DRESSING:
- 1 TB Balsamic Vinegar
- 2 TB Olive Oil extra-virgin
- ½ TB Honey
- 1 t Dijon Mustard
- Salt and Black Pepper to taste
Instructions
SALAD:
- Arrange the Salad Leaves on a serving platter – toss together the Chicken, Feta, Avocado and Parma Ham – scoop over the Salad Leaves – sprinkle over the Cashew Nuts
DRESSING:
- Combine the Dressing ingredients – whisk well – drizzle over the Salad
Serve for lunch or as a light dinner with a crusty dinner roll on the side.
