Chicken Avocado And Cucumber Wraps are the perfect, cool Summer’s day light dinner or lunch. The Chicken is marinated in a sweet/salty marinade first.
Wraps are one of my favorite meals to prepare, especially in Summer. All of the ingredients can be prepped, cooked if needed, in advance.
These Chicken Avocado and Cucumber Wraps are especially great as a light dinner, or lunch, on a hot day. Very filling and seeing as Cucumber is a natural cooling fruit which is perfect for Spring and Summer.
And yes, Cucumbers are a fruit, not a vegetable ! This is a proper, scientific fact, but I think most of us can agree that we refer to Cucumbers as a vegetable.
The Chicken gets a quick marinate in a sweet/salty marinade, which comes together in a minute or two.
This marinade makes the world of difference in taste, therefore do not skip this step.
Let’s have a quick look at the ingredients :

Sweet/Salty Marinade Ingredients:
- 2 tablespoons Lemon Juice
- 1 tablespoon Honey
- 2 tablespoons Vegetable Oil
- 1/2 tablespoon Chinese 5 Spice
Chicken:
- 3 Chicken Fillets, deboned, skinned breasts (halved to make 6 thin pieces)
Remaining ingredients for the filling:
- 1 Cucumber, pitted and julienned (cut into strips)
- 2 Avocados, thinly sliced, drizzled with a little Lemon Juice to avoid discoloration
- 1/2 cup Cilantro Leaves, chopped
- 6 large Tortillas
To serve:
- Sweet Chili Sauce, for dipping (your favorite brand or homemade will do)

Chicken Avocado And Cucumber Wraps
Ingredients
- 2 tablespoons Lemon Juice
- 1 tablespoon Honey
- 2 tablespoons Vegetable Oil
- ½ tablespoon Chinese 5 Spice
- 3 Chicken Fillets deboned, skinned breasts (halved to make 6 thin pieces)
- 1 Ccucumber pitted and julienned
- 2 Avocados thinly sliced, drizzled with a little Lemon Juice
- ½ cup Cilantro Leaves chopped
- 6 large Tortillas
- ½ cup Sweet Chili Sauce for dipping (your favorite brand will do)
Instructions
- Combine the Lemon Juice, Honey, Oil and Chinese 5 Spice - pour over the Chicken and marinade for 30 minutes in the refrigerator, turning once or twice
- Remove the Chicken from the refrigerator and let stand 15 minutes at room temperature
- Cook the Chicken in a griddle pan until done, slice into thin strips
- Divide the Chicken and the remaining ingredients in 6 and place in the center of the Tortillas, roll up and serve with the Sweet Chili Sauce
