Fluffy light, slightly crispy and butter drenched bottom ! Amazing biscuit recipe, which will become a regular on our menu.

Right, so I found this recipe on The Better Baker’s site a while back and wanted to make it ever since. Finally, I got to this (and why did I wait to make these???) and we enjoyed the biscuits tremendously.

I made a small change (because I’m real lazy!). Decided not to pour the dough into the baking dish, level the dough or cut it whilst still unbaked.

I could feel the dough was very sticky and my short fuse is not a friend with sticky dishes needed to be level and cut.

I simply took large spoonfuls and dropped them into the dish with the melted Butter. Came out just fine ! And that is the way I have made it ever since.

Ingredients
  

  • ½ cup Unsalted Butter
  • 2 ½ cups Flour all-purpose
  • 4 teaspoons Caster Sugar (superfine sugar)
  • 4 teaspoons Baking Powder
  • 2 teaspoons Salt
  • 1 ¾ cups Buttermilk

Instructions
 

  • Pre-heat the oven to 230 deg C (450 deg F) – spray a 20 x 20cm ( 8" x 8" ) oven dish with cooking spray
  • Place the Butter in the oven dish and into the oven until the Butter has melted
  • Mix together the Flour, Sugar, Baking Powder and Salt – add the Buttermilk and mix well (the dough is very sticky)
  • Drop large spoonfuls of dough onto the melted Butter – bake 20 – 25 minutes

I love this recipe, Linda. I have a similar one called "Butter Dips" that is a cross between a biscuit and bread sticks. And oh so buttery. I'm glad you decided to experiment with drop biscuits and make life easier for the rest of us. Ha!

I can never make biscuits...they always turn out like rocks. But..I keep trying and I'll try yours! Is that an 8" square pan? In America we are on the cutting edge of everything you know....except metrics!!! LOL!
