Blueberry and Lemon Trifles are one of the most popular desserts and the crunchy Peanut Brittle makes this one extra special. Use Pineapple Juice if you prefer non-alcoholic treats
Trifles are one of my favorite desserts to serve as you could really mix and match so many ingredients to suit either your family’s taste or to go seasonal.
I like these Blueberry and Lemon Trifles for the fresh and slight zesty taste. Blueberry and Lemon are also an excellent combination and always work great together.
For a bit of extra sweetness and crunch, Peanut Brittle is added to the trifles, which makes them a little unusual as well.
The Blueberry and Lemon Trifles give you a taste of sweet and sour and the texture vary from smooth, creamy to crunchy.
Leave out the Sherry and use Pineapple Juice instead of you prefer a non-alcoholic version. My daughter does not like Sherry, therefore I always use Pineapple Juice in hers and Sherry in ours.
Substitute for Finger biscuits in a trifle:
Sponge cake is also delicious (instead of the Finger Biscuits). However it will turn out a little more soggy – I would use less Sherry/Juice in that case.

Blueberry and Lemon Trifles
Ingredients
- 250 grams Finger Biscuits ( 8 oz )
- ½ cup Sherry or Pineapple Juice
- 2 cups Fresh Cream double cream/whipping cream
- ¾ cup Lemon Curd homemade or store-bought
- 3 cups Fresh Blueberries
- ½ cup Peanut Brittle crushed
Instructions
- Place the Finger Biscuits in a bowl – drizzle over the Sherry and let soak for a few minutes
- Whip the Cream until stiff peaks form – add the Lemon Curd, but only give it a swirl through
- Start layering the Trifles {in 6 individual serving glasses or one big bowl} : half of the Sherry soaked Biscuits – half the Blueberries – half of the Lemon Curd Cream – half the Peanut Brittle – repeat
- Place in refrigerator and chill for 2 hours before serving
Keep chilled until ready to serve – at least 2 hours.
