Smoked Chicken and Blueberry Salad is a filling, healthy salad which is perfect for lunch or as a light dinner – Quick, easy Salad with a Mustard Lime Dressing.
This is another salad we love as a light dinner or a Saturday lunch. The Smoked Chicken and Blueberry Salad is bursting with flavor and perfect during Summer.
As soon as Blueberries hit our store shelves, I usually buy several containers. We are huge blueberry fans, and enjoy them by the handful as is, as well as in salads and baked goods.
Of course we are also cheese lovers ! So much so, that I normally add a bowl of Feta cheese on the side as well. My hubby loves this idea to the moon and back !
It means he can really load up on the Feta cheese. My son would add a little more, and the rest of us are quite happy with the quantity in the salad as per the recipe.
Smoked Chicken alternative:
By using Smoked Chicken, we save a lot of time. But whenever we grilled Chicken the previous day, and have leftovers, we use them in the salad for lunch the following day.
The absolute fabulous dressing !
And the Mustard-Lime dressing is an absolute must in this salad ! The dressing works so well with all the other ingredient flavors.
If you prefer you can serve the dressing on the side and each person can help themselves. Just an FYI – depending on the eaters, I make a double batch of the dressing now and then.
You can easily make another batch as soon as you notice the dressing disappears too quickly. It is a simple quick whisk of the ingredients and you can top up the small side bowl.
The smoked Chicken and Blueberry Salad is not only low in fat, but a very healthy meal. And a big bonus ?? Kids are going crazy over this salad !
Personally I think it is one of kids’ favorite types of salad, mainly due to the Blueberries. Anything fruity has always been a hit with my kids, since they were little, right up to now that they are all grown up.

Smoked Chicken and Blueberry Salad
Ingredients
SALAD:
- 2 handfuls Baby Spinach Leaves
- ¼ cup Mint Leaves
- 1 bunch Spring Onions chopped
- 1 cup Blueberries
- ½ cup Feta Cheese cubed
- 3 Smoked Chicken Fillets sliced
- 2 TB Almond Slivers roasted
DRESSING:
- 2 t Dijon Mustard
- 3 TB Fresh Lime Juice
- 3 TB Olive Oil extra virgin
- Salt and Black Pepper to taste
Instructions
SALAD:
- Toss together all the Salad ingredients in a large bowl - transfer to a serving plate
DRESSING:
- Whisk together all the Dressing ingredients and drizzle over the salad just before serving

I love putting fruit in salads, but I never think to use blueberries. This looks like a lovely summer salad.

Such a tasty looking salad! I love blueberries but don't put them in salads that often. Perhaps I should as this looks so healthy and delicious.
