Cheesy Buttermilk Potato Casserole is a family favorite, comforting side dish and with only 5 ingredients this is so quick and easy to throw together.
As a side dish this Cheesy Buttermilk Potato Casserole is one of my family’s favorites. With only 5 ingredients the casserole is so easy to make and I normally have all the ingredients on hand.
Potatoes are one of the most versatile vegetables and when you combine potatoes and cheese it is most certainly always a winner.
Now and then I would add a layer of leftover ham or even ground beef and make a dinner dish out of the casserole. A crunchy side salad or two and we are happy.
Served as dinner (with added ham or ground beef) the recipe yields four adult sized servings or two adult and four kid sized meals.
I like to cook the Potatoes during the morning as I am home all day, but you can also cook them the night before. Slicing is much easier when the Potatoes are cooled and would not break as much when it is still hot.
We never have any leftovers even when I make the full recipe, and it is only 3 of us for dinner. Second helpings are almost the norm when we have this cheesy Buttermilk Potato Casserole on the dinner table.
You will notice I do not add any additional Salt or Pepper to the Buttermilk and Egg mixture, as I have found that the seasoning in between the layers, as well as the Cheddar, is more than enough.
A delicious, comforting side dish which can be served with just about any main meal – chicken, roasts, pork chops and more.

Cheesy Buttermilk Casserole
Ingredients
- 6 Potatoes
- Salt and Pepper to taste
- 1 cup Cheddar Cheese grated
- 1 cup Buttermilk
- 2 Eggs
- Parsley to garnish (optional)
Instructions
- Pre-heat the oven to 180 deg C (360 deg F) – spray a 20 x 30 cm ( 8 x 12 inch ) oven dish with cooking oil
- Boil the Potatoes in the skin until cooked – cool slightly and remove skin – slice into 10 mm slices
- Arrange half the Potatoes in the prepared oven dish – season to taste with Salt and Pepper – sprinkle over half the Cheese and repeat the layers
- Whisk together the Buttermilk and Eggs – pour over the layers – bake 25 minutes or until the Egg mixture has set and the Cheese is melted
Sprinkle with Parsley, if using, and serve immediately as a side.

This one looks so good, and would be easy to multiply. Making a ham next weekend so will hold onto this to go with it!
