Mix, bake and serve – that’s it ! And to top it all, this Tomato Basil Bread is not only to serve with soup.
Butter alone on a hot slice is to die for delicious already. But I also like to make cheese sandwiches for lunch the following day – that is, if I have any leftover.
The Tomato Juice I use in this quick recipe is the kind you would normally use for a Bloody Mary and available in most supermarkets.
Liquor stores also keep these in stock, but make sure the brand you are buying does not contain actual liquor.

Tomato Basil Bread
Ingredients
- ⅔ cup Unsalted Butter softened
- 1 TB Tomato Paste
- 1 TB Brown Sugar
- 2 Eggs
- 2 cups Flour
- 1 t Baking Powder
- 1 t Baking Soda
- ¼ t Salt
- 2 t Dried Basil
- ½ cup Tomato Juice
- 1 cup Cheddar Cheese grated
Instructions
- 1.) Pre-heat the oven to 180 deg C (350 deg F) – spray a 15 x 21cm ( 6 x 8 inch ) loaf tin and line the bottom with baking paper
- 2.) Cream together the Butter, Tomato Paste, Sugar and Eggs until fluffy
- 3.) Sift together the Flour, Baking Powder, Baking Soda and Salt – stir in the Basil – add gradually into the creamed mixture alternately with the Tomato Juice – fold in Cheese
- 4.) Spoon into prepared loaf tin and bake 1 hour or until a tester comes out clean
- 5.) Remove from the oven, cool 5 minutes and turn out onto cooling rack to cool
Serve slightly warm or cold with or without butter – especially great served with Soup.
