Chicken and Mango Salad can be served for lunch or as a light dinner, especially if you already had a rich, filling lunch earlier. Add a crusty dinner roll and you have one very tasty meal.
My salad series is coming to an end and I think besides this Chicken and Mango Salad, I only have one more to share with you for the moment.
I make this Chicken salad very often as it is totally one of my family’s favorites. We love just about any salad with Chicken but add Mango ! Man, oh, man … to die for delicious.
Unfortunately, even though Mangoes are mostly available, the standard has most definitely dropped in SA.
It looks like the Mangoes are being picked way too early and no matter what you do or how long you wait, it never seems to ripen, which in the end lands in the garbage.
Which I so hate, not only wasting money, but a good fruit as well (if it was taken care of properly). I now only buy Mangoes which are ready to eat immediately.
And most of the time, I’d make this Chicken and Mango Salad, or some kind of dessert – Mango smoothies are also delicious and always welcome.
I add two types of cheeses to this salad, but alternate the Camembert with Brie now and then. Feta is always a must as we are huge fans of Feta Cheese.
You can use any kind of Nuts, mixed or only one type, I like to use up bits I have left in packets, in salads or in a dish where it does not really matter which you use.
Same goes for the Chicken, use leftover cooked chicken, store-bought rotisserie or pick up a small pack of smoked chicken at the deli.

Ingredients
- 2 handfuls Crisp Lettuce torn
- 1 cup Cherry Tomatoes halved
- 1 Mango peeled, stoned and cubed
- 1 Green Bell Pepper thinly sliced
- ½ Red Onion sliced
- 3-4 slices Camembert Cheese cut into smaller pieces
- 1 wheel Feta Cheese cubed
- ½ cup Mixed Nuts
- 2 Chicken Fillets cooked and sliced
- ¼ cup Italian Salad Dressing
Instructions
- Layer the Lettuce on a large serving plate
- Toss together the remaining ingredients, except the Dressing – arrange over the Lettuce
- Drizzle over the Dressing just before serving
