Cowboy Breakfast (One-Pot) is a scrumptious brunch dish, or serve as dinner with fresh bread on the side ~ this Cowboy Casserole is an all-in-one dish !
I like to serve breakfast for dinner and this Cowboy Breakfast (One-Pot) is one of those dishes.
This meal is a little rich for us to have as an early morning breakfast, but is perfect for brunch. Especially if we have no plans for lunch and are only having a light dinner that evening. That is now when we actually have it in the morning and not for dinner.
Served as dinner, I like to have soft, fresh bread on the side to enjoy with this Cowboy Breakfast. Nothing more is really required as this is a very filling meal.
I prefer to keep the Cherry Tomatoes whole and as soon as they start to burst open, the dish is ready. Too much juices from the Tomatoes whilst it is still cooking, ruins the taste a little. My opinion, you might actually prefer it that way !
Beef Sausages are best to use, but I have made the dish, using Pork Sausages as well, which was also delicious, but I prefer Beef. I have once substituted the Butter Beans with Chickpeas, but that was not a hit with my family !
They immediately noticed, and even though I heard no complaining, I know it was not something they liked.

Cowboy Breakfast (One-Pot)
Ingredients
- 1 TB Oil
- 8 Beef Sausages
- 1 Onion halved, sliced
- 2 t Fresh Garlic minced
- ½ small Cabbage shredded
- 1 can (410g) Butterbeans drained and rinsed
- 1 t Curry Powder
- ½ t Sugar
- 1 t White Wine Vinegar
- 1 ½ cups Cherry Tomatoes
- Salt and Black Pepper to taste
Instructions
- Heat the Oil in a large wok or pan – cook the Sausages until done
- Add the Onion and Garlic – saute until the Onions are golden and tender
- Stir in the Cabbage, Beans, Curry, Sugar, Vinegar and Tomatoes – mix gently, cover and let simmer 15 – 20 minutes or until the Cabbage is cooked and the Tomatoes start to burst open
- Remove from the heat – season to taste with Salt and Black Pepper
Serve immediately with fresh or toasted bread (a sunny-side-up Egg is also great with this breakfast!)
