I have another delicious cocktail recipe for you today. Or appetizer, if you would like to serve it that way.
These Cocktail Beef Empanadas are spicy, cheesy and just enough to welcome your guests with as an appetizer.
Made mine in my Babycakes Cupcake Maker, which took less than 30 minute. That is, prepping and cooking the Empanadas.
But, before I had the BCM, I made my Empanadas as per the recipe which I am sharing today, in case you do not have a BCM …yet !
If you do own one, follow the instructions and cook the Empanadas that way.
Whichever cooking/baking method you decide to use, these little savory treats are totally worth it !
Check the sealing of the pastry !
Just a note on the Babycakes Cupcake Maker. I did not pinch close my 2 pieces of pastry. Instead I only followed the instructions where the little tool you receive with the machine, should have sealed the Empanadas.
However, some of them did not seal 100% as I am sure you can see in the photos. (note to self – make sure the pastry pieces are properly sealed next time)
Since I was using my machine, I also decided to try out the recipe in the little booklet I received with the machine.
I have adapted quantities, as well as ingredients and below is my version of a very tasty, spicy appetizer.
The Cocktail Beef Empanadas are also great as a snack or part of a savory platter. Oh, and a definite must on game day ! I make double batches when we have a big Rugby game coming up, and they are always the first to be gobbled up.
Take Note: Recipe will yield 12 when using a mini muffin pan and 8 when using the Babycakes Cupcake Maker.

Cocktail Beef Empanadas
Cocktail Beef Empanadas
Ingredients
- 1 TB Olive Oil
- 125 g Lean Ground Beef ( 4 oz )
- ¼ cup Spring Onions finely chopped
- 1 t Fresh Garlic crushed
- 1 ½ t Chili Powder
- ¼ t Ground Cumin
- Salt and Pepper to taste
- ⅓ cup Peppadew Sauce
- ⅓ cup Cheddar Cheese finely grated
- 1 roll Frozen Short Crust Pastry defrosted
- Paprika for dusting (optional)
Instructions
- Pre-heat the oven to 200 deg C (400 deg F) – spray a mini muffin pan with cooking oil
- Heat the Oil in a medium pan – add the Ground Beef, Onion and Garlic until the Beef is done and the Garlic soft – remove from heat and drain if necessary
- Stir in the Chili Powder, Cumin, Salt and Pepper, Peppadew Sauce and Cheddar Cheese
- Unroll the Short Crust Pastry and roll out a little thinner – using a round cutter (twice the size of the muffin holes) and cut out 12 rounds of Pastry – press into the mini muffin pan
- Fill the Pastry cups with the Beef mixture
- Using a smaller cutter, cut out 12 rounds {size of the top of the muffin holes} – top each filled cup and pinch together the edges of the Pastry cups and the tops – sprinkle with Paprika (if using)
- Bake 15 – 18 minutes or until golden

Susan, Peppadew Sauce is like a salsa, but made of piquante peppers, some tomato and onion and it is available in Mild, Hot or Extra Hot. You can use any kind of Salsa or Sauce you like if the Peppadew is unavailable. {replying here as your e-mail is not attached to your comment}

These look delicious! I've never tried to make empanadas because we have the most amazing local empanada shop in our public market where I live, but this recipe may be a good opportunity to try.
