Melon and Cherry Tomato Salad is so refreshing and is loved by all. This recipe never disappoints and I never have any leftovers either, not even when I make a double batch.
It is also a colorful, delicious looking salad and I just love those Micro Greens as it not only looks great, but add so much taste as well.
I prefer Micro Greens as the flavor is much better and stronger than their more adult leafy friends. The choices one now has in supermarkets or at the green grocer are also never ending. I usually try out a new variety quite often.
The Salad ingredients can be tossed together an hour or two before serving, leaving only the dressing until the very last minute.
A delicious salad that goes well with everything, from a plateful home cooked Pot Roast and veggies, to a side at a barbecue. Definitely at a barbecue, come to think of it !
If Camembert is not your kind of cheese, try Brie or any kind of Goat’s Cheese.

Melon and Cherry Tomato Salad
Ingredients
- 2 cups Mixed Micro Greens (Lettuce, Arugula, Coriander, Baby Spinach etc)
- ½ cup Red Onion chopped
- ½ cup Celery chopped
- 1 ½ cup Melon cubed ( Cantaloupe )
- 1 cup Cherry Tomatoes halved and whole
- ⅓ cup Camembert Cheese thinly slices
- “Lite” Italian or Greek Salad Dressing to taste, homemade or store-bought
Instructions
- Toss together all the Salad Ingredients {except the dressing} and transfer to a serving dish
- Drizzle with Dressing just before serving

Morning Linda,This is my first time to visit, came over from StoneGable. Wow, these salad looks wonderful.........I really enjoy the salads with fruit mixed in especially for Spring and Summer. Will definitely be trying these soon. and theone with strawberries looks awesome..................as I am definitely a strawberry fan too.
